Easy and light tomato soup

Hi guys, for today I have prepared a very fresh and light tomato soup. I have to say that I love tomatoes a lot, and I consume one tomato every day.

I usually eat it in sandwiches or salads, but this time I decided to prepare it as a soup, in which you can feel its sour taste. Its fruits are rich in vitamin C, carotene, vitamin B1, and vitamin E. In addition to vitamins, it contains significant amounts of manganese, iron, and copper.

I often eat this soup for breakfast, sometimes I pack it for work because it is equally good and cold and hot, so sometimes I prepare a larger amount to remain enough for the next day at work.

 

 

This soup contains only a few ingredients, which make it easy to prepare. It can also be served as an appetizer or as a light dinner that will keep you full.

It would be best to prepare it with grated organic tomatoes or with organic tomato juice with pulp, because that way, the taste of the tomato is more intense. It will take you 15 minutes to prepare this soup, because there is no big philosophy for its preparation, nor does it require any special ingredients.

 

 

All you need is a tomato and the smallest pasta you can buy. Sometimes when I don’t have small pasta, I use spaghetti, which I break into small pieces. The other spices are listed below in the recipe description. You can also add various seeds such as flax, sunflower or pumpkin, for crunchiness.

This soup is light, refreshing, and thick. It fills up a lot, and it cooks really fast, you can store it in the fridge and eat it cold or hot. Bring it to work or your picnic and enjoy.

or dinner, cold in summer or hot in winter.

I N G R E D I E N T S

  • 5 big organic tomatoes grated
  • 1.3 cups of water
  • 3 Tbsp olive oil
  • ½ tsp dried onion
  • Pinch of dried garlic
  • Salt and pepper
  • Handful pasta of your choice which is cooked for 7 min.
  • Fresh cilantro

I N S T R U C T I O N S

  1. Add the tomato pulp, the water and the olive oil into a pot and bring them to boil on a middle heat;
  2. Add the dried spices and stir for couple of seconds;
  3. After 10 min of boiling, add the pasta and stir for 3-4 min. Cook for 7-8 minutes or until the pasta is cooked;
  4. Serve the tomato soup, with fresh cilantro on the top, croutons or bagel and enjoy;
