Chickpeas and Quinoa in Tomato Sauce With Spinach And Mashed Potatoes
I want more meals like this please. Amazing meal with lots of colors and a good taste. Simple recipe ready for 20 minutes which will give you awesome nutrition. This meal is light and creamy and trust me it will disappear in seconds when you put it on the table.
I’m trying to include more vegan dishes like this in my everyday life. I need quick meals with a few ingredients because I’m living a busy life. We all need more veggies and proteins in one meal so I highly recommend you to try this recipe.
For this awesome meal I use spinach, potatoes, chickpeas, quinoa, garlic and tomato sauce. You will prepare the recipe fast because you’ll cook the ingredients at the same time and in 15 minutes you’ll have an awesome meal.
You can make this with other beans and veggies, for an example, you can use onion instead of garlic or sweet potato instead of regular potato.
Also this recipe is enough for three people. If you want you can add salad, soup or just a piece of bread to the meal. We eat this meal for lunch, just the two of us (me and my partner) and we always feel full after it.
Chickpeas are just awesome, It doesn’t matter if they came out of a tin can or are soaked over night and cooked. They are a great source of plant-based protein and provide essential vitamins and minerals.
Quinoa contains almost twice as much fiber as other grains and can help you with losing weight. Both chickpeas and quinoa have a low glycemic index which is good for blood sugar. Spinach and potatoes are also healthy and full of nutrients.
This recipe requires three pots. In the first pot you’ll need to boil the potatoes, in the second you will blanch the spinach and in the third you will prepare the chickpeas and the quinoa sauce.
This is such a beautiful dish that contains a lot of proteins, fiber and other nutrients. With each bite of the mashed potatoes, you can feel the nice and creamy texture, the nutty taste of the chickpeas and the sour taste from the tomato sauce.
The steps are easy. First blanch the spinach in boiling water for a few seconds. Cook the potatoes in water and mash them with a potato masher or with a fork. Cook the quinoa with the tomato sauce, then add the garlic and the chickpeas.

- 2 medium potatoes
- 1/4 cup quinoa
- 1 can chickpeas
- 1 garlic clove
- Salt
- Black pepper
- 1/4 tsp curry powder
- Olive oil
- 1 1/2 cup tomato sauce
I N S T R U C T I O N S

- Put the tomato sauce, garlic, curry powder and the quinoa in a pot on medium heat. Season with salt;
- In meantime peel the potatoes, cut them in squares and boil them. When cooked, drain them and keep 2 Tbsp of the cooked water and mash them together with a fork or a potato masher. Season it with salt and black pepper;
- When the quinoa is well cooked, add the chickpeas and stir everything well for 2-3 minutes;
- In a separate pot with boiling water add the spinach and allow it to boil for 30 seconds to 1 minute until you see a bright green color. Drain the excess water from the spinach with a strainer or a slotted spoon. Season with salt;
- Serve everything together and drizzle with olive oil;
