Christmas Vegan Feast
It’s almost Christmas people, yay 🙂 This post is for you, if you’re looking for easy vegan recipes for your Christmas feast. These recipes are cheap, easy to make, healthy and very tasty.
I love this time of the year, I hope like the most of you :). I always feel calm, peaceful and a bit excited because of the upcoming year. On this holiday usually we go to my mom’s place for dinner (me and my brother) where we celebrate the holiday while we eat and chat. We talk about the positive and negative moments from the past year and we’re also sharing wishes and goals for the upcoming year.
The tradition for Christmas is that the mom puts a coin in the dough and makes a round bread. She bakes the bread and then the father cuts the bread into several pieces. The first piece is for God, the second for the house, the third for the father, fourth for the mom and the other pieces are for the kids. The belief is that the person who has the coin in his piece is going to have luck in the upcoming year.
This holiday is one of my favorite holidays because the energy and the spirit on this day is so special. On this day I also celebrate one more year without meat and dairy products in my life. For those who don’t know I stopped eating meat the day after Christmas on 2009.
On this day I am being grateful because of all the situations and people that came to my life and also for the people who have gone out of my life.
Even though I celebrate Christmas on 7th of January because I’m Orthodox, today I want to present and give you some ideas for the Christmas dinner:
1.Mini baguettes with sesame seeds – with this recipe everyone gets his own mini baguette which looks very cute. You need to make them first because the dough needs to rest for 10 minutes. While the dough rests you can prepare for the next recipes. The steps are easy. You need to mix the ingredients together, knead the dough and leave the dough to rest. After the dough has rested for 10 minutes, you can shape the baguettes and bake them.

- 3/4 (0.75) cup water
- 2 cups flour
- 1 tsp salt
- olive oil
- sesame seeds
I N S T R U C T I O N S

- Put the flour in a bowl, then add the water and the salt. Knead the dough and if it’s sticky add more flour with your fingers but be careful not to add too much. If the dough is too dry add more water;
- Shape the dough into mini baguettes. Brush olive oil on top of them and sprinkle some sesame seeds. Bake them on 200°C for 25 minutes (or more, depending on your oven);
2. Stuffed peppers with sauce – this is one of my favorite recipes. These peppers are stuffed with rice, leek, mushrooms and walnuts and they’re closed with fresh tomato rounds (so the filling can stay inside the peppers). The spices that I use give lovely and intense flavor to this dish. You can use different colors of peppers and you can try to add more vegetable in the filling if you want.

- 4 peppers
- 4.2 ounces rice
- 1 small leek
- 6 mushrooms
- 1,7 ounces walnuts
- 1 tomato
- juice from 1 tomato
- olive oil
- salt
- pepper
- 1/2 tsp red pepper flakes
- 1 Tbsp ground red pepper
- 2 cups boiling water

- Wash and dry the peppers and cut off the tops of the peppers. Remove and discard any seeds and membranes from the interior;
- Cut the leeks in rounds and cut the mushrooms into tiny pieces. Fry them together in a pan for 5 minutes while constantly stirring;
- Wash the rice, add it to the pan and then add the spices. Add the tomato juice and stir constantly for 5 minutes;
- Fill the peppers with the filling and close them with one tomato round;
- Place the stuffed peppers in a pot in a vertical position and add the boiling water. Add the spices in the water and cover the pot with the lid;
- Cook the peppers for about 25 minutes on low heat or until the peppers are soft;
3.Potato puree – the preparation for this recipe is very simple. You need to cook the potatoes, mash and mix them with hot oil. I serve two balls of potato puree into the stuffed peppers sauce. This combination is perfect for me.

- 2 small potatoes
- salt
- 1 Tbsp olive oil
I N S T R U C T I O N S
- Peel the potatoes and cut them in squares;
- Cook them in boiling water until they become soft. Drain the potatoes and mash them with a fork or puree masher. Season with salt;
- Heat the olive oil, pour it on the potatoes and mix well. Leave the puree to cool down;
- When the potatoes have cooled enough, make two small bowls between your palms and place them aside;
4.Mixed salad – this is the perfect colorful salad for this meal. You only need to grate and chop the veggies and you’re ready just in a couple of minutes. The dressing for this salad is simple and tasty.

- 5 lettuce leaves
- 1 small beetroot
- 2 medium carrots
- 1/4 purple cabbage
- half cucumber
- 1 small daikon
- 3 Tbsp olive oil
- juice from 1 lemon
- salt
I N S T R U C T I O N S

- Grate the daikon, the carrots and the beetroot;
- Chop the lettuce and the cabbage and cut the cucumber in the desired shape;
- Mix the olive oil, salt and lemon together and serve the dressing in the middle of the plate;
5.Hummus with olives – I always have hummus in my fridge with different spices or herbs. If you have your own hummus ready in your fridge you can serve it on the table and if not, I recommend this recipe with olives which is simple and easy to make like all of the hummus recipes.

- 1 can chickpeas
- 10 green olives
- juice from half lemon
- 1 Tbsp tahini
- 2 Tbsp olive oil
- 1/2 tsp black pepper
I N S T R U C T I O N S
- Mix all ingredients in a blender and blend until the mixture is nice and smooth;
6.Roasted pumpkin with cinnamon, brown sugar and peanut butter – I chose this dessert for this Christmas because I want to leave the chocolate and sugary desserts for New Year’s Eve, so I can round the end of this year with the finest vegan desserts. Even though this pumpkin dessert is simple, it has a heavenly taste.

- 1 small pumpkin
- 1 Tbsp brown sugar
- 1 tsp cinnamon
- 1 Tbsp peanut butter
I N S T R U C T I O N S
- Cut the pumpkin in rounds and clean the seeds;
- Bake the pumpkin on 200°C for 15 minutes;
- Sprinkle the brown sugar and the cinnamon on each piece;
- Bake for 10 more minutes (or less depending on your oven) and when the pumpkin has cooled down, spread peanut butter on each piece;
