Crunchy Sunflower Seeds Spread

One of the things that the most of us love to eat are sandwiches or bread slices with different spreads and toppings. While I’m constantly experimenting with all kinds of veggies and legumes in order to find the spread that I like the most, I finally made a beautiful spread and believe it or not, it’s amazing flavor comes from the lovely nuts. Because I am trying to eat several different nuts everyday and sometimes it’s boring to eat them raw, I figured out that I can make them as a spread.

Usually, I have these ingredients at home, so I can enjoy this spread every time I want or I can easily make it when I have announced guests. So, for this spread I use sunflower seeds, garlic, curry powder, nutritional yeast, mustard and lemon juice. The curry powder gives a nice yellow color and oriental taste and the mustard and the garlic give this spread a bitter and intense flavor. You can try to make this recipe with any nuts that you have in your kitchen or you can change some ingredients that you don’t like. The combination of these ingredients for me is perfect and the taste is pretty light.

To put it simply, this spread is absolutely delicious and addictive. I eat this spread on sandwiches, burgers, burritos or even as a dip with crackers.

The sunflower seeds can take care of your hunger and also will supply you with vitamin E, magnesium, selenium and more. Also they have power to reduce “bad” LDL cholesterol in your body. The best part is that they taste wonderful and can be combined with a variety of foods or if you prefer, just snack on them throughout the day.

With this spread you can make sandwiches for your next picnic, for your kids to eat at school or just eat them as breakfast to start your day in an awesome way. I top my slices with nutritional yeast for a little bit of a cheese taste, with spinach and beetroot for more vitamins and iron and carrots for vitamin A and fiber.

You can make this spread by blending everything and you can top them with the veggies like I did or with anything that you have in the fridge. I always love to drink a fresh cup of tea with these lovely colorful bread slices.

I N G R E D I E N T S

  • 3.5 ounce raw sunflower seeds
  • 1 tsp mustard
  • 1 tsp curry powder
  • 1 tsp nutritional yeast
  • 1 small garlic clove
  • 1 Tbsp lemon juice
  • 2-3 Tbsp water
  • Salt
  • 6-8 spinach leaves
  • 1 big carrot
  • 1 small beetroot

I N S T R U C T I O N S

    1. Put all ingredients in a blender and pulse a couple of times until the paste is smooth and the sunflower seeds are still cruchy;
    2. Cut the carrot and the beetroot in star shapes using cookie cutters;
    3. Transfer to a serving container and serve at once, or cover and refrigerate until needed;
