Healthy Vegan Pizza
Perfect day for pizza right? 🙂 I love to make and eat pizza once a week. That’s my rule. Sometimes it happens to be twice a week, while watching a movie and sitting on the couch with my favorite blanket.
I’m obsessed with green veggies and I’m trying to eat them as much as I can. You can see that from my Green Beauty Soup recipe 🙂 So why not put some on a pizza. This pizza recipe is one of my favorite. The flavor is so awesome and tasty and the dough is made from whole-wheat flour.
Whole-wheat flour is healthier and it has more fiber than white flour. It contains several vitamins, including folate, vitamins B-1, B-3 and B-5 and also it helps to regulate your weight. I know that some of you will be skeptical because whole-wheat pizza dough sometimes doesn’t turn out well, so you can make it with white flour if you prefer.
The recipe for the pizza dough is with only two ingredients. It’s a simple recipe which requires only flour, water and salt of course. I know that the dough will be fluffier if I put yeast or baking soda in it and wait for some time to double in size, but usually I don’t have that much time and I want my recipes to be the quickest and easiest as they can be.
The ingredients that I use to top this pizza are tomato sauce, green peppers, mushrooms, zucchini, parsley, olive oil and garlic. If you like you can add more green veggies like kale, spinach, basil etc. But please first try my version and then if you want you can modify it.
The steps are easy. First you need to make the dough and put it on a baking sheet (I didn’t do that this time because the dough wasn’t sticky). Then spread the tomato sauce. Wash the mushrooms and slice them into rounds, wash the pepper and cut into rounds as well. Wash and dry the zucchini with kitchen paper and slice off both ends.
Peel the zucchini slowly using a vegetable peeler. Cut the olives in rounds and put them on the zucchini.
Bake the pizza until it has a golden brown crust. Mix the parsley, minced garlic and olive oil in a bowl. Pour the mixture on the top of the pizza.

I N G R E D I E N T S
For the pizza dough:
- 1 1/2 cup whole-wheat flour(add more if necessary)
- 5/8 cup water
- 1/2 tsp salt
Toppings:
- 6 medium mushrooms
- 1 small zucchini
- 6 green olives
- 1 green pepper
- 3 Tbsp tomato sauce
- Handful of parsley
- 2 small garlic cloves
- 2 Tbsp olive oil
I N S T R U C T I O N S

- Combine the flour,water and salt in a bowl and work the dough. If it’s too watery add more flour or if it’s too dry add more water. Be careful and add the water and flour slowly;
- Spread the dough on a baking sheet and spread the tomato sauce;
- Wash the mushrooms and slice them in rounds and put them on the pizza;
- Wash and dry the zucchini and slice off both ends.Using a vegetable peeler peel the zucchini slowly. Add the zucchini slices on the mushrooms;
- Wash the pepper, dry it and cut it in rounds;
- Bake the pizza on 240°C for 10 minutes or until it has a brown crust;
- In meantime wash the parsley and chop it. Put the parsley in a small bowl, add minced garlic and olive oil. Pour the mixture on the pizza after baking;
