Mouthwatering Vegan Lasagna

This recipe is easy to make because it doesn’t require much time for prep and it contains only few ingredients.

This lasagna recipe is one of my favorite recipes that I ever made. I love to prepare this dish for my family and friends, because I want to show them that they can eat delicious meatless lasagna. They were really surprised of the lasagnas taste, because they didn’t expect a lasagna without meat and cheese to be that delicious.

I’ve used for this recipe a spinach lasagna, fresh mushrooms, red onion, eggplant, tomato sauce and spices. The prep for this dish is super fast and easy, it only requires time for baking which is about 20-30 minutes depending on your oven.

This lasagna tastes even better when it’s cold. I always eat it with nutritional yeast on the top.

First, you need to fry the onion, eggplant and the mushrooms.

Then in a glass baking dish spread tomato sauce and sprinkle with basil, then place the lasagna inside and again spread tomato sauce.

Spread the fried ingredients on top of the lasagna and season it with salt.Repeat this until you use up all of the fried ingredients.

I N G R E D I E N T S

  • 1 pkg spinach lasagna;
  • 2 eggplants (chopped on squares);
  • 1 medium onion (chopped);
  • 1 pound sliced mushrooms;
  • 4 cup tomato sauce;
  • Dried basil;
  • Salt and pepper;
  • 4 cup boiled water;

I N S T R U C T I O N S

  1. Preheat the oven to 200 °C and position a rack in the middle of the oven;
  2. In a deep pan add oil and heat on medium;
  3. Add the onion and stir for a few seconds;
  4. Add the chopped eggplants, sliced mushrooms and occasionally stir for about 10 – 15 minutes;
  5. Season it with salt and pepper;
  6. Mix tomato sauce, basil and pinch of salt in a separate bowl;
  7. At the bottom of the glass baking sheet, spread tomato sauce and place 3 pieces of lasagna;
  8. Place the fried ingredients on the top of the lasagna;
  9. Spread tomato sauce on the ingredients. Next add another layer of lasagna;
  10. Repeat with more lasagna, ingredients mixture, and sauce. Then top with one last layer of lasagna and cup and a half of sauce; Add 4 cups boiling water in the glass baking sheet;
  11. Bake for 30-45 minutes.
