Tomato, Avocado and Smoked Peppers Salad
Hello everyone, today I wanted to have a easy and healthy meal for lunch and I remembered this salad recipe. Every day I’m trying to eat fresh homemade salads because, the taste and the smell of veggies at this time of the year are more intense and amazing. Usually, I eat this salad as a main meal with cooked quinoa, buckwheat, grilled eggplant or grilled zucchini. Sometimes I prefer to have it for dinner with two pieces of grilled whole wheat bread.
This very tasty meal combines many flavors. The smoked peppers are so delicious in combination with the tomatoes and avocado. The onions and fresh oregano gave this salad stronger taste and they complement the whole combination of veggies. For this recipe you can use any color of peppers and you can bake, grill or barbecue them. After that you need to place the hot peppers in a clean and dry glass bowl, wrap the bowl with plastic wrap and let them rest for 10 min. You can change the fresh oregano with peppermint, coriander or basil. If you don’t like or eat onion you can change it with chives or simply leave it out.
The only thing which requires more time is preparing the peppers. Because it takes so much time, sometimes I grill a bigger amount of peppers (usually on weekends) which then I put them in jars with olive oil and keep them in a refrigerator. This way, I can eat this salad whenever I want, because the preparation is quicker.
Then, you need to wash the tomatoes, cut them in squares and cut the onion in half moon-shaped slices.
Peal the peppers and clean their seeds. Cut the peppers in squares and add them in the bowl with other ingredients.
Peal the avocado and cut it also in squares. Add the fresh oregano leaves and squeeze lemon juice. Add olive oil and season the salad with salt.

- 2 medium tomatoes
- 2 small onions
- 6 green peppers
- 1 large avocado
- Handful fresh oregano leaves
- 1 lemon
- Olive oil
- Salt
I N S T R U C T I O N S
- Wash the peppers and wipe them with dry cloth. Place them on a grill to the side, away from direct fire or in a smoker. Place the hot peppers in a clean and dry glass bowl. Wrap the bowl with plastic wrap and let the peppers rest for 10 min;
- Chop the onion and the tomatoes in a desired shape;
- Peal the skin off the peppers and cut them in squares;
- Cut the avocado in squares;
- Season the salad with olive oil, lemon, and the fresh oregano leaves;
- Serve it with grilled eggplant, grilled bread or soup;
