Vegan moussaka with jackfruit crumbs
This dish is called “moussaka” and it is one of the traditional Macedonian’s dishes, made with circles of potatoes, meat, scrambled eggs and spices. This dish is eaten a lot in Macedonia, and is often served with a fresh salad of lettuce, cabbage or cucumbers. It is arranged in layers and then baked in the oven. Of course, I wanted to do a vegan version of this recipe, and I can say it is definitely a delicious dish that you can not stop eating it and you will ask for more.
The recipe preparation is easy and it cooks quickly (only you need to wait for the baking for about 30 minutes, which sounds not to good, if you are sooo hungry😁), and with this recipe you can serve 4 people. The moussaka dish is also part of the Greek cuisine, but of course it is prepared in a different way with their local ingredients. Also, you can find this recipe in Turkey but prepared with eggplants instead of potatoes.
For this moussaka recipe, I’ve used jackfruit, as a substitute for meat, which is arranged between layers of potatoes, previously light fried with spices. If you do not have jackfruit crumbs you can use soy crumbs, they will be equally delicious in this recipe. When I became vegan, I was sad, because I could not eat this recipe because there was no proper vegan substitute for the meat part, but one day I experimented making the recipe with soy crumbs, the next time I made it with jackfruit crumbs and when I tried it I realized that this recipe would be very often my lunch dish.
As I said the preparation procedure is very easy and simple all you have to do is fry the onion, add the jackfruit crumbs and all of the spices together. Divide the mixture into two equall parts. Arrange in a round or rectangular baking pan a row of potatoes (cut them into circles before), then put one layer of the mixture, then another row of potatoes, then put the mixture again and finish with a row of potatoes . Add boiling water and bake it in a preheated oven. Read the instructions below for exact preparation and the quantity of the ingredients that you need. Good appetite.

I N G R E D I E N T S
- 6 medium potatoes
- 1 medium onion
- 75 gr. jackfruit crumbs (or soy crumbs)
- 1/4 tsp. dried garlic
- 1/4 tsp. red grounded pepper
- 1/4 tsp. smoked red pepper
- 1/4 tsp. dried parsley
- salt and pepper
- sunflower oil and boiling water
I N S T R U C T I O N S
- Put the jackfruit or soy crumbs in a boiling water (so they can expand);
- Cut the potatoes into circles;
- Chop the onion on squares, and fry it for a couple of minutes on medium heat;
- Drain the jackfruit crumbs out of water and put them in the onion, and add all of the spices. Stir constantly and let them fried for about 10 minutes. Divide the mixture into two equal parts;
- Add two tbsp. of oil on the bottom of a round baking pan and place circles of potatoes. Place one part of the mixture on them, then add another layer of circle potatoes, pour one tbsp. oil on them and again place the second part of the mixture. Finish the top with another layer of potato circles and put two tbsp. of oil on them;
- Gently pour boiling water till the last layer of potatoes. Bake in a preheated oven at 200 degrees for about 30 minutes or until the are potatoes cooked and golden brown. Serve it with fresh salad of your choice;
