Yummy Coconut Bombs Dessert

In this recipe you will see how much I love coconut, and why I love it.

Before I became vegan, I was eating the famous Raffaello Bonbons. I was consuming them like crazy and in enormous amount. The thing I loved the most was the combination of the coconut with the raw hazelnut. Trust me when I say that it was like a heaven in my mouth.

I am so happy that I went back in my memory in those days, because that was how the idea to try and make a vegan version of these coconut bonbons was born. You will be surprised of how much these vegan bonbons resemble the original Raffaello Bonbons.

The taste of these bonbons reminds me of sandy beaches with turquoise water. Palm trees and cocktails. This is my definition for inner peace and place where I want to be at this moment
But, it is time to get back to reality. This dessert is also one of my fast-to-prepare recipes, which contains only a few simple ingredients.

Yummy Coconut Bombs Dessert Ingredients

All you have to do is simply combine all the ingredients into a mixing bowl and form small bites (bowl shaped) from the mixture. If the texture is too dry, add more coconut milk into the mixing bowl. And if the texture is too liquid, simply add more of shredded coconut. Can you believe that these heaven balls are ready in just 10 minutes?

I N G R E D I E N T S

  • 7 oz vegan crushed biscuits
  • 3.5 oz shredded coconut
  • 1.7 oz hazelnuts
  • 3 tbsp. coconut oil
  • 1/2 cup coconut milk
  • 1/2 cup stevia/bronw sugar

I N S T R U C T I O N S

  1. Mix the biscuits and shredded coconut together with the coconut oil in a big bowl and gently stir the mixture with wooden spoon;
  2. Add the stevia or brown sugar and coconut milk and continue stirring until it is all well combined;
  3. With clean hands take a piece from the mixture and with both palms of your hands make small balls;
  4. Gently add one hazelnut inside of each ball and close it with your fingers;
  5. Place the balls in the fridge for 30 min;
  6. Serve the bonbons cold with a glass of coconut milk;
