Baked Apples with Buckwheat and Walnuts Filling

The definition of fall for me is definitely this recipe. Since we are in those cold and sunny autumn days this recipe can be perfect for your next meal. This recipe for stuffed apples has the taste and smell of the lovely fall.
These stuffed apples are full of nutrition and are a healthy idea for breakfast or dessert. I always eat them warm straight from the oven, but they are also tasty when they’re cold. These apples are one of my favorite fall breakfasts and I usually drink a cup of fresh tea with them.
I use red apples but you can use any color and any type that you like. I made a mixture out of buckwheat, walnuts, cinnamon and brown sugar. The buckwheat and the walnuts give these apples a nutty flavor, the brown sugar gives them sweetness and the cinnamon lifts their taste to a higher level. The apples absorb the flavor of the cinnamon and sugar and they will literally melt in your mouth when you eat them.
You can use quinoa, couscous or oats. You can add raisins, dried cranberries or any dried fruit that you like in this mixture, but try this recipe first, trust me you won’t regret it. You can also add white sugar if you want although I prefer brown sugar because it gives them caramel flavor. Also you can put ice cream, coconut whipped cream or melted chocolate on top of them. I always add more cinnamon on the top, I just can resist the taste.
These stuffed apples will make your house smell so nice because of the cinnamon, it will relax you and everyone around you.
So let me explain to you how I made this recipe :). First you need to cook the buckwheat according to the package instructions. In meantime core the apples using an apple corer or a small spoon and crush the walnuts. Drain the buckwheat when it’s cooked and add the sugar, the cinnamon and the crushed walnuts. Put the mixture in the apples and bake them for 10 minutes or until they become soft.

I N G R E D I E N T S
- 4 red apples
- 1/2 cup buckwheat
- 1/2 cup walnuts
- 1 tsp cinnamon
- 2 Tbsp brown sugar
I N S T R U C T I O N S
- Wash the apples and dry them with clean kitchen towel;
- Cook the buckwheat according to the package instructions;
- Core the apples using an apple corer or a small spoon and crush the walnuts;
- In a bowl, mix together the brown sugar, cinnamon and the crushed walnuts.Drain the buckwheat when it’s cooked and add it in the bowl;
- Put the mixture in the apples and bake them 10-15 minutes or until they become soft;
- Serve the apples with more cinnamon on top, ice cream, whipped cream or melted chocolate;
