Cinnamon Vegan Cookies

The best easy vegan cookies that are perfect for the holidays or gifting. Slightly crunchy, soft in the middle and with an amazing taste. The cookies don’t have chocolate in them but they’re still awesome and very tasty especially when the days are cold.

These cookies contain coconut and cinnamon in them so they’re perfect for mornings in combination with tea, coffee, hot cocoa or with a glass of milk. I start my day with tea or hot cocoa no matter if it’s summer or winter because I don’t drink coffee.

I quit smoking and stopped drinking coffee. I noticed that I have tachycardia after drinking a cup of coffee or even from a sip of coffee. I was a coffee addicted girl and I had minimum three cups of coffee in the day. Now, when I want to drink coffee I drink decaf coffee with almond or coconut milk.

I love chocolate chip cookies, but I chose these cinnamon cookies to be my number one this fall. I enjoy making them before the holidays so I can begin to feel the holiday spirit earlier.

You can make these cookies with your kids and you’ll have a lot of fun together. You can add chocolate chips, dry fruit or nuts if you want these cookies to be rich in flavor. This recipe is very tasty to me and I don’t want to add extra flavors in it even though once, I added crushed hazelnuts and it was delicious.

The cookies are quick and easy to make. You need to mix all of the ingredients in one bowl and bake the cookies for 15 minutes. You can make them in different shapes using cookie cutters, but I like the round shape more.

Today I made one of my favorite homemade teas. You can make this tea while you bake the cookies (it will be ready when the cookies are baked). For this tea I use ginger, water and lemon. You need to boil the water, add the ginger and cook the tea for 15 minutes. Leave the ginger in the water for 5 minutes more and then remove it from the water. Add the lemon and agave or sugar for sweetness.

This tea is healthy and great, because it gives strength to your body and immunity, calms your stomach, it has a positive effect on the nervous system, stimulates the circulation and it warms up the entire organism. Because of the benefits I drink this tea in the morning during the cold months.

I N G R E D I E N T S

  • 1 cup rye flour
  • 1/2 cup shredded coconut
  • 1/2 cup brown sugar
  • 4 Tbsp apricot marmalade or any type of marmalade that you have
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 Tbsp water 
  • 1 Tbsp coconut oil

I N S T R U C T I O N S

  1. Mix all dry ingredients in a bowl;
  2. Add the marmalade, the water and the coconut oil;
  3. Work the dough well for a couple of minutes. If the mixture is too dry add more water;
  4. Bake the cookies on 220°C for 15 minutes (depending on your oven) or until they become golden brown;
