Amazing Bruschetta With Black Olive Pesto

I know that you will love this bruschetta that is topped off with olives pesto. You will love it simply because it tastes perfect and it’s ready in less than 10 minutes.

This is a light and healthy appetizer,  great for summer days but still delicious to eat at any time of the year. 🙂

For this recipe I used whole wheat bread, but you can use your favorite one. If you are gluten intolerant  choose gluten-free bread. Try to make it by yourself or you can buy it in the nearest store.

I love these bruschetta because you can eat them for breakfast or dinner. I absolutely love to eat and prepare this snack on a movie night or serve to my guests, especially if they come unannounced.

I have these ingredients at home mostly and sometimes I make more pesto, and keep it in fridge in a small jar. I also top off rice cakes or sandwiches with this pesto.  I love the saltiness and the freshness of the olives. And the crunchiness of the baked bread is like heaven in my mouth.

The first thing I do is cut the bread into smaller slices, I slice them in triangles usually. But you can cut the bread in any shape that you want.

Next you need to bake the bread in the oven for about 5 min. or until the bread turns golden brown.

In a meanwhile, put all of the remaining ingredients in a food processor and blend it until its all well blended.

I N G R E D I E N T S

  • 3 slices whole wheat bread
  • 10-15 olives without pit
  • 10-15 walnuts
  • Olive oil
  • 1 garlic clove
  • Salt

I N S T R U C T I O N S

  • Place the bread on a baking sheet and bake it for 5 min. or until the crust turns golden brown.
  • Put the olives, garlic and walnuts in a food processor and blend until all ingredients blend into even paste.
  • Add olive oil and blend until all ingredients are well combined.
  • Season it with salt.
  • Serve with fresh cilantro on top.
