For this recipe, I like to use whole wheat bread because it becomes beautifully crisp in the oven and adds a slightly nutty flavor. However, you can use any bread you enjoy, including sourdough, baguette, or gluten-free bread.

INGREDIENTS
- 3 large slices of whole wheat bread
- 15 pitted black olives
- 10 walnut halves
- 1 small garlic clove
- 2 tablespoons extra virgin olive oil
- Salt, to taste
- Fresh parsley or cilantro, for serving (optional)
INSTRUCTIONS
- Preheat the oven to 200°C (400°F).
- Cut each slice of bread into two smaller triangles. Arrange the six pieces in a single layer on a baking tray.
- Toast the bread for approximately 5 minutes, or until it becomes crisp and lightly golden around the edges. Watch it carefully to prevent it from burning.
- While the bread is toasting, place the pitted black olives, walnut halves and garlic in a food processor.
- Pulse several times until the ingredients are finely chopped and well combined.
- Add the extra virgin olive oil and blend again until you get a thick, spreadable pesto. Scrape down the sides of the food processor if necessary.
- Taste the pesto before adding salt, since the olives may already be salty enough. Add a small amount of salt only if needed.
- Remove the toasted bread from the oven and allow it to cool for one or two minutes.
- Spread the black olive pesto generously over each piece of toasted bread.
- Garnish with fresh parsley or cilantro, if desired, and serve immediately while the bread is still crisp.
TIPS FOR THE BEST VEGAN BRUSCHETTA
Use pitted black olives to make the preparation quicker and easier. Since different varieties of olives contain different amounts of salt, always taste the pesto before seasoning it.
Pulse the ingredients instead of blending them completely smooth. A slightly coarse texture gives the pesto more character and allows you to taste the walnuts and olives in every bite.
If the pesto is too thick to spread, add one more teaspoon of olive oil and pulse again. Toasting time may vary depending on the thickness and type of bread, so keep an eye on it while it is in the oven.
Add the pesto shortly before serving. If it sits on the toasted bread for too long, the bruschetta may lose its crisp texture.
